Because there is AIR in an airtight SKIN, like a balloon. Besides it has a safety certified electronics board attached. The board is equiped with sensors to detect and measure air pressure deviation, when the surface is deformed due to any collision.

As per one of your previous presentations an E-Stop and Acknowledge button must be added, is this unavoidably necessary or would the system work property without them too?
At least one emergency stop is a required according to EN ISO 10218-1:2011: Robots and robotic devices – Safety requirements for industrial robots – Part 1: Robots.
An acknowledge button is typically required as well. The robot must not go on working by itself after collisions. The operator must eliminate the collision and ensure that there is no more hazard threatens. Then the operator must deliberately resume operation.

What is the added value of using AIRSKIN versus only using standard KUKA advanced collision detection software? This software is commonly used in arc welding.
The advanced collision detection software for arc welding is not safety rated. You can not use it for collaborative applications. Minimum requirement for robots regarding function safety must be category 3, PLd (ISO 10218). The application must be designed to fulfill the force and pressure limits laid out in the ISO/TS 15066.
